Since its opening in 2009, has led Saitama’s specialty coffee. With the mission of “creating a coffee culture in northern Saitama Prefecture” and the theme of “delicious coffee and stories I want to tell you”, I opened a cafe that mainly serves light roast. In 2015, he started his own roasting, and in 2017 he opened PLACE COFFEE in the station building, and in the following year he started conscience, a stand specializing in coffee. Yosuke Suzuki, who has been pursuing the appeal of light roast for many years, said, “At the beginning of the opening, there weren’t any shops in Saitama that mainly served light roasted coffee, so I struggled with the image that acidity = not delicious. It wasn’t until around 2013 when we started serving coffee from Norwegian roasters that we started to feel that we were getting a good response. The packaging is also unique, and Mr. Suzuki uses acrylic paint to express the inspiration he felt during the tasting. It is also fun to imagine the taste from the design, which communicates coffee with colors and images.
