Takato Koyanagi, who came to New Zealand from the game industry aiming to become a barista and gained experience from roasting to trainer. He has a history of winning the Cup Tasters Championship 2016 New Zealand tournament. After returning to Japan in 2020 after staying for eight years, he renovated a corner of his parents’ house and started a roastery. Mr. Koyanagi focuses on a medium-light roast that brings out the maximum sweetness while preserving acidity. “At the beginning of the business, I was worried about whether specialty coffee would be accepted in this region, where specialty coffee has not penetrated. I was able to fall in love with.” At the roastery, you can taste the beans before purchasing so that you can find your favorite beans. “I think it’s very important as an opportunity to experience unknown coffee,” says Mr. Koyanagi.
