Nagasaki Coffee stands on the approach to Kawaguchi Sengen Shrine. While working in the hotel industry, he started a pop-up business in April 2022 that is open only one day a month. After steadily honing his roasting skills, he retired from the company and made a new start as a roaster in 2023. As you can see from the quaint storefront, Nell Drip is what got me hooked on coffee. “When I drank the dark-roasted Nell Drip, I was shocked to find that it was completely different from the coffee I had been drinking before.The master always talked about coffee with sparkling eyes, and I was amazed at how deep coffee is, which allows you to explore as much as you want. I thought it was deep,” he says. He began roasting by hand and taught himself, and after drinking Ethiopian light roasts, he became more attracted to the flavor characteristics of specialty foods. The company continues to evolve as a roaster, including being selected as a finalist in the 1ST CRACK COFFEE CHALLENGE 2023, a competition where young roasters compete on roasting techniques and presentation.
