After working as a barista at a chain cafe in Seattle, Yoshiya Tanaka learned roasting techniques at Nelson Coffee in Sendai. The conditions for a good coffee are “whether it can be drunk deliciously even when it is cold, and whether it is properly roasted”. Careful selection is made to ensure that the beans are fully ripe, and cupping takes time.
