STOCKHOLM ROAST from Sweden has moved from Aoyama Commune to the site of an eel restaurant that has been watching over Kabutocho for nearly 70 years. The roaster is Mr. Gonsaku Sato, a roaster who traveled from Australia to Canada and New Zealand on a working holiday to learn about coffee, and after returning to Japan, was active at Cream of the Crop. Some of the raw beans are purchased from France and are not yet available in Japan. “Both espresso and filters have a clean aftertaste. Expressing the ‘cleanliness’ of coffee is one of our goals when roasting at SR.”
